Poor Man's Roasted Veggies
Quick and easy roasted vegetable side dish using whatever fresh vegetables you have in the fridge!
- 2 tbsp olive oil
- 1 tsp onion powder
- 1/2 tsp garlic salt
- 1/4 tsp black pepper
- 2-4 Cups Fresh Veggies (Broccoli, carrots, onion, peppers, etc)
Preheat oven to 375 F.
Chop vegetables into bite size pieces and place in large bowl.
Pour olive oil over vegetables and stir. Add onion powder, garlic salt, black pepper and stir well.
Place veggies on baking sheet covered in foil or use a silicon baking mat.
Bake at 375 F for 30 minutes, stirring every 10 minutes.
