Soup!!! Isn’t it delightful??! I haven’t always been a soup fan… but then, I went to Ireland. Guys….. they. do. soup. RIGHT! I literally ordered soup somewhere at least once a day, if not twice. The rainy weather definitely added to the effect i’m sure, but it was just dang delicious. So, in honor of fall being here once again we are doing a Fall Soup Roundup!
Here are five of our favorites. Tried and true. Dang delicious. And the best part?? Easy peasy.
First up, the game changer. This soup right here. Changed. My. Life. I tried a few different recipes when we got home trying to nail it, but this. This is the ticket that reminded me of sitting in a little pub in Kilkenny, and I (as usual) trying to not spend too much money, just went for the “soup special.” I’M SO GLAD I DID!!! Vegetable soup. That’s it. No fancy name, nothing too fancy to look at, but the magical dance that happened to my tastebuds as I sat and listened to live music while sitting across from the love of my life was just…. oh I can’t even. Each year, my ward does a “Souper Saturday.” Now that I think of it, i’m not sure that it’s “Souper…” it could be “Super…” either way, soup is involved, and I always make this soup. I remember eating it at Panera bread and my mind blew up. “What is thissssss????” It was the closest thing to soup heaven I could have dreamed up at that time. I’ve tried COUNTLESS Broccoli Cheddar soups. My poor hubby had to eat horrible clumpy melted cheese covered broccoli multiple times while I was trying to find the right recipe. Alas, this is it. Sitting in another pub in Ireland (that’s where you’ll find the best food folks, don’t be shy) this golden beauty was placed in front of my drooling pallet. Holy mammas it is absolutely out of this world. I came home and tried to find a copycat recipe and alas, Ahead of Thyme had done it! I love LOVE that you roast the veggies in the oven. For some reason it just feels so much easier, yet I somehow feel like I am a chef with qualifications well beyond my own. Win win. Get the Recipe @ Ahead of Thyme
Do you know of anyone who likes to eat Cream of Mushroom Soup besides in a casserole? Me neither… wait, yes I do. I DO! If and only if, it’s Irish. So many stories… but again, in a pub: My husband was dying for fish and chips. I have a hard time going there, so I asked for the soup again. When I heard it was Cream of Mushroom I thought, “Dang. This is it. Ireland is finally going to let me down.” Based on their soup track record however, I decided it was a better option that fish and chips. It totally was. And it wasn’t just a better option, it was a bowl of heaven. SO good. The mushrooms aren’t squeaky chewy (yikes) but melt in your mouth salty, sweet, savory deliciousness. My sister in law makes this soup often when our family gets together. It’s incredible. I love ham, and I love potatoes, so it makes sense that it’s absolutely to die for, but I mean, this soup is to DIE FOR. The gold medal with this soup is it’s ease. I’ve whipped this up faster than a bowl of cold cereal (just kidding… but close), and it’s ingredients are always something we usually have on hand. Give it a go! Get the Recipe @ One She Two She
